1 1/2 cups of Quinoa cooked in 2 cups vegetable broth till done, let cool before you mix it into the salad.
1 cucumber, chopped into small peices
1/2 tomato, chopped and pull out the juicy part
1 bunch green onions, 3-4 stalk thinly sliced
1/2 cup freshly chopped mint
2 cups freshly chopped parsley
Mix all ingredients together with dressing and then add 1 avocado: cut into small peices to serve on top at the end
Dressing:
1/2 cup fresh lemon juice 3/4 cup extra virgin olive oil 1 clove garlic, minced 1 tablespoon pepper Sea salt to taste
